Cookies!!

Who doesn't love cookies (and baking!)??  This recipe should make 13-15 cookies depending on how big you want them. They are gluten free if you use gluten free flour and are the perfect snack. Here's how to make some choc chip oat cookies.
Ingredients:
100g butter (unsalted)
100g light brown muscavado sugar
1 large free range egg
150g jumbo oats
a pinch of salt
75g plain flour, sifted (you can use gluten free)
100g milk (or dark) chocolate chips
Method:
Preheat oven Gas Mark 5 / 190 degrees Fan
Beat the butter with the sugar in a large mixing bowl until there's no lumps and is a creamy brown. Beat in the egg. Fold in the oats, salt and flour then stir in the chocolate chips.

Drop spoonfuls of the mixture onto parchment lined baking sheets with room for the cookie mixture to spread. Bake in the oven for 12-15 minutes until they are a pale golden. Cool for a minute or two on the sheets then transfer to wire racks to cool completely.
Store in an air tight tin.
